Ingredients
- 2 packets Mr Chen’s Pork & Chive Dumplings
- 2 heads pak choi, trimmed and roughly chopped
- 1 clove garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp soy sauce
- 2.5 tbsp Thai red curry paste
- 400ml coconut milk
- 2 spring onions, finely sliced, to serve
- 1 tbsp sesame seeds, to serve
- Cooked rice, to serve (optional)

Method
Preheat the oven to 200C / 180C fan. Pour the coconut milk, red curry paste and soy sauce into a large, deep baking dish and whisk to combine.
Add the pak choi, garlic and ginger and gently stir through the sauce.
Nestle the frozen dumplings into the sauce, leaving the tops slightly exposed. Cover the dish tightly with foil and bake for 15 minutes.
Remove the foil and bake for a further 8-10 minutes, or until the dumplings are piping hot and cooked through and the tops are lightly golden.
Scatter over the spring onions and sesame seeds. Serve hot, with cooked rice on the side if you like.
