Ingredients

Dan Dan Dressing

  • 10g ground Sichuan pepper
  • 75ml water
  • 150g brown sugar
  • 375ml soy sauce
  • 300ml black vinegar
  • 300g crispy chilli paste
  • 100g minced garlic
  • 50ml sesame oil

 

For the Rest of the Dish

  • 4 green onions/shallots, finely sliced
  • 1 tbsp crushed peanuts
  • 5g picked coriander
  • Sriracha sauce (optional)

Method

Place all Dan Dan dressing ingredients into a large mixing bowl and whisk till the brown sugar is completely dissolved. Set aside ready for serving.

Bring a large pot of water to the boil and cook the dumplings straight from the freezer for 8 minutes on a rolling boil.

Strain the dumplings and divide into serving bowls.

Give the Dan Dan dressing another whisk and add a generous amount over the dumplings.

Top with sliced green onions, coriander and crushed peanuts.

Store the remaining Dan Dan dressing in a jar for next time, or enjoy with other dishes as a dipping sauce or condiment.
